Supplies

  • 2 cups coconut milk
  • 1 ½ cups water
  • ¾ cup white sugar
  • ½ cup cornstarch
  • Salt to taste
  • Strawberries, kiwi and mango chopped very small

Passo a passo

  1. Combine and cook ingredients in a saucepan over low heat and continuously stir. Mix until thick and comes to a boil.
  2. Pour into 8 inch pan and chill in the refrigerator until firm.
  3. Mix the cut up fruit together and top on each square.

Supplies

Somen Noodle Salad

  • 1 pkg somen noodles
  • 1 cucumber, seeded and sliced thin
  • 1 head green lettuce, chopped thin
  • 1 egg, fried and sliced into strips
  • Char Siu, cut into thin strips
  • 1 kamaboko (fishcake – typically pink and white), sliced thin
  • 1 Green onion, chopped
  • 1 cup Vegetable oil
  • ¾ cup vinegar
  • ½ cup soy sauce
  • 1 T salt
  • 1 cup white sugar
  • 3 garlic, minced
  • 1-2 Tablespoon sesame seeds, pulverized

Char Siu — Chinese BBQ Pork

  • 1 pork tenderloin, pierce with a fork or knife all over
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon hoisin sauce
  • ¼ cup ketchup
  • 1 tablespoon rice vinegar
  • Chinese five spice is optional because acquired taste!
  • 1 tablespoon red bean curd (Chinese, found in Asian section or stores)
  • 1 large gallon ziplock bag

Somen Noodle Salad

  1. Boil somen, rinse, drain and plate (make individual swirls with a fork/chopstick on the salad to make it easier to serve and eat).
  2. Layer the somen with lettuce, cucumbers.
  3. Top with sliced kamaboko, ham, and egg.
  4. Sprinkle green onion over salad. Chill.
  5. Pulverize sesame seeds for the sauce.
  6. Combine sauce ingredients in a bowl or dressing bottle and shake and chill before serving.
  7. Pour sauce over salad when ready to devour!

Char Siu — Chinese BBQ Pork

  1. Preheat oven to 400 degrees F.
  2. Pierce tenderloin with a fork or knife all over. Cut tenderloin (with the grain) in half.
  3. Mix soy sauce, honey, ketchup, brown sugar, rice wine, hoisin sauce, bean curd in a saucepan over medium heat. Cook until combined and warmed.
  4. Pour the marinade into a ziplock bag with the pork and marinate. Leave for at least 2 hours.
  5. Remove tenderloin from bag and place on a baking rack (placed on top of the baking sheet).
  6. Bake tenderloin for 30 minutes in the oven.
