A chef Parisa prepara uma refeição de pequenos pratos chamado Mezzes, que são perfeitos para juntar todos os amigos ou familiares ao redor da mesa. Todo mundo vai amar!

Supplies

  • 3 cups frozen chopped spinach (thawed and drained)
  • 1 heaping tablespoon dried dill
  • 1 heaping tablespoon dried parsley
  • 1 heaping tablespoon dried chives
  • ¾ cup parmesan
  • 1 ½ cup crumbled feta
  • 1 egg
  • ½ teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Place spinach in mixing bowl. Add egg and all the herbs and spices and mix until evenly blended.
  3. Pour into a well-oiled ramekin dish.
  4. Bake in the oven for 25 minutes or until it gets a toasty crust on top.
  5. Serve with za’atar crisps.

  • 4 pita bread rounds
  • ¾ cup za’atar seasoning
  • Olive oil spray

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Cut each pita round into 6 wedges.
  3. Place wedges onto a baking sheet lined with parchment paper.
  4. Spray pita wedges with oil to coat lightly.
  5. Generously sprinkle wedges with za’atar seasoning until well coated.
  6. Bake in the oven for 8-10 minutes or until it gets crispy.

  • 6 cooked beets
  • 3 cups labneh
  • 2 tablespoons tahini sauce
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • ½ teaspoon red pepper flakes
  • Persian cucumbers, cut intp spears
  • Tri-color bell peppers, sliced
  • Carrots, sliced
  • Celery, cut into sticks
  • Radishes, quartered
  • Cauliflower, cut into florets

  1. Puree cooked beets in a small food processor.
  2. Place pureed beets in mixing bowl and add oil, lemon juice, and tahini. Gently blend.
  3. Add all spices. Mix till well blended.
  4. Pour into a decorative circular serving bowl. Drizzle with olive oil.
  5. Place bowl in the center of a large round serving platter.
  6. Arrange vegetables around the bowl of dip in a colorful and well-composed manner.

  • 1 large rectangular lavash flatbread
  • 2 heaping tablespoons roasted red pepper dip
  • ¾ cup crumbled feta
  • ¼ cup red onion, thinly sliced
  • ¼ cup black olives, sliced
  • ½ cup cilantro, chopped
  • 1 teaspoon red pepper flakes

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Spread a light layer of red pepper dip on lavash.
  3. Evenly sprinkle olives, onions, and cilantro on lavash.
  4. Evenly sprinkle crumbled feta and red pepper flakes on top.
  5. Place on a baking sheet lined with parchment paper and bake for 10 minutes.
  6. Cut into 8 pieces and serve.
