O chef Alex prepara sushi em casa! Ele começa com um tutorial sobre como fazer o arroz de sushi perfeito e, em seguida, prepara um tempurá de camarão e vegetais e termina com rolinhos Califórnia e seu favorito: niguiri.
Supplies
Tempura
- Large heavy duty pot filled with vegetable oil
- 8 Large black tiger shrimp (peeled and deveined)
- 3 Shitake mushrooms
- 3 slices kabocha squash
- 1 Japanese eggplant
- 2 spring onion
- 2 shiso leaves
Batter
- 1 egg
- 6.5 oz ice cold water
- 8 oz sifted all-purpose flour
Dipping Sauce
- 1/2 c dashi
- 3 T Mirin
- 3 T. soy sauce
- 2 T. sugar
Passo a passo
Tempura
- Heat oil to 350 F.
- Prepare shrimp and vegetables.
- Dip pieces individually into prepared batter.
- Fry larger pieces first then smaller.
- Remove once light golden brown.
- Let oil drain off on paper towels or wire rack.
- Serve with sauce.
Batter
- Make batter, mix egg and water then mix flour into liquid (don't over mix, its ok to leave some clumps).
Dipping Sauce
- Make sauce by heating all ingredients in sauce pan, then cool.
Supplies
California Roll
- 1 King crab leg (no claw)
- 1/4 avocado
- 1 Japanese cucumber
- 1 piece nori paper
- 1/2 c. sushi rice
- 1 t. toasted sesame seed
- 1 T. soy sauce
- 1 t. wasabi
Shrimp Tempura Roll
- 2 tempura shrimp
- 1/4 avocado
- 1 japanese cucumber
- 1 bunch Kaiware sprouts
- 1 t. sriracha
- 1 t. kewpie mayonnaise
- 1 piece nori paper
- 1/2 c. sushi rice
- 1 T. soy sauce
- 1 T. wasabi
Salmon Nigiri
- 1 Very nice piece sushi grade salmon
- 1/4 c sushi rice
- 1 t. wasabi
Passo a passo
California Roll
- Lay nori paper over bamboo sushi mat.
- Layer crab meat, avocado, cucumber on nori.
- Layer rice over and sprinkle sesame seeds.
- Carefully and tightly roll the sushi roll using mat for leverage.
- Serve with soy sauce and wasabi on the side.
Shrimp Tempura Roll
- Lay nori paper over bamboo sushi mat
- Layer tempura fried shrimp, avocado, cucumber, sprouts on nori
- Lightly squirt sriracha and kewpie mayonnaise over the roll
- Layer rice over
- Carefully and tightly roll the sushi roll using mat for leverage
- Serve with soy sauce and wasabi on the side
Salmon Nigiri
- Thinly slice salmon into bite size pieces
- With wet hands, form sushi into salmon-size logs
- Place a dab of wasabi between fish and rice
