Chicken Koobideh
- 1.5 lbs ground chicken thighs
- 1 white onion
- 2 tbsp turmeric
- 2 tbsp liquid saffron
- 1 tbsp black pepper
- 2 tbsp kosher salt
Mast o Musir
- 1 cup labneh
- 1 bunch Persian dried shallots
- Zest of 1 lemon
- 2 tbsp sumac
Shirazi
- Juice of 3 lemons
- 1 cup olive oil
- 8 Persian cucumbers
- 6 plum or Roma tomatoes
- 1 red onion
- 2 tbsp dried mint
- 1 bunch parsley
- 1/4 tsp saffron
- Salt & Pepper

Chicken Koobideh
- Mix all ground chicken thighs with spices.
- Grate onion into mixture.
- Spoon mixture onto a sheet of plastic wrap and roll into a skinny log.
- Brush with olive oil.
- Sear in pan.
- Finish in oven.
Mast o Musir
- Hydrate Persian shallots.
- Add to yogurt.
- Mix in the lemon zest, salt, and sumac to season.
Shirazi
- Dice cucumbers and tomatoes.
- Finely chop parsley.
- Add dried mint.
- Dress with olive oil, salt, pepper, and lemon juice directly in bowl.
- Season with salt and pepper to taste.
