Macarrão de Abobrinha e Muita Energia!

Laura prepara um macarrão de abobrinha, faz algumas bolinhas doces de energia e sai do estúdio para fazer uma viagem linda pela Califórnia.

Supplies

Noodles

  • 3-4 zucchini squash
  • 1/2 teaspoon salt

Meatballs

  • 4 cups Portobello mushrooms (roughly chopped)
  • 1 cup walnuts (soaked overnight)
  • 1/2 yellow onion (chopped)
  • 1 clove garlic
  • 1 tablespoon apple cider vinegar
  • 1/4 cup parsley
  • 2 teaspoons cumin
  • 1 tablespoon Nama Shoyu
  • 1/2 teaspoon salt

Sauce

  • 1 cup Brazil nuts (soaked overnight)
  • 1 cup sun-dried tomatoes (soaked overnight)
  • 1 medium tomato
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon agave nectar
  • 1 teaspoon red pepper flakes
  • 1 1/2 teaspoon salt

Passo a passo

Noodles

  1. Spiralize, mandoline, or just cut zucchini into noodles.
  2. Toss with 1/2 teaspoon of salt and set aside in a colander to drain.
  3. Assemble everything on a plate.

Meatballs

  1. Roll meatballs into balls.
  2. Place in dehydrator overnight or in the oven on a silpat sheet or parchment paper for about 1-2 hours at 200F, depending on your oven's temperature.

Sauce

  1. Drain Brazil nuts and sun-dried tomatoes and add all sauce ingredients to food processor. Blend.
  2. Set aside in a bowl.

  • 1 cup coconut oil
  • 1 cup cocoa powder
  • 3 tablespoons maple/agave/honey
  • Pinch of sea salt

Macaroon Crust

  • 3 cups coconut flakes
  • 1 cup cocoa powder
  • 3/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt

  • Ice Cream
  • Chocolate Shell
  • Toppings

  1. Peel bananas.
  2. Cut into chunks.
  3. Freeze.
  4. Blend in a food processor.
  5. For different flavors, add berries and blend again.

Chocolate Shell

  1. Combine ingredients for chocolate shell.

Macaroon Crust

  1. Combine all ingredients for macaroon crust.

Ice Cream Sundae

  1. Pour chocolate shell over ice cream.
  2. Add your favorite toppings.

Bon Bons

  1. Freeze ice cream.
  2. Scoop into balls.
  3. Dip into chocolate.
  4. Add back to freezer.

Ice Cream Cake

  1. Press macaroon crust into spring-form pan.
  2. Pour in ice cream.
  3. Freeze.

  • 2 bunches of watercress
  • 2 oranges
  • 1 bunch mint
  • 1 bunch basil
  • 1 avocado

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1-2 small shallots
  • Minced salt and pepper
