Ingredientes
Homemade Orecchiette
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup water
- 3 butter packets
Anchovies & Broccoli Rabe
- 3 anchovies, with some oil
- 2 cloves garlic, minced
- 1 red pepper flake packet
- 1 bunch broccoli rabe
- 3 butter packets

Homemade Orecchiette
- In a mixing bowl, add flour and water.
- Slowly add the flour from the sides to the center, stirring to incorporate. Mix until a dough forms, and then knead on a floured surface for 8 to 10 minutes.
- Cover the dough with a kitchen towel and allow to rest for 20 minutes.
- Flatten the dough into a round pancake and cut into strips. Using one strip at a time, roll into a long rope, then cut into 1/3-inch pieces. Press and roll each piece of dough towards yourself and create a curl. Pick up dough piece and invert it over your thumb.
- Transfer to a parchment-lined tray that is dusted with flour. Repeat with remaining dough and set aside.
- Put a large pot of water on to boil.
- Add the pasta to the boiling water and cook for 2 to 3 minutes, then add to the pan with the broccoli rabe. Finish with butter packets and remaining red pepper flakes.
Anchovies & Broccoli Rabe
- Add anchovy oil to a skillet over medium-low heat, add anchovies and gently stir until they begin to melt.
- Stir in garlic and half the packet of red pepper flakes and continue cooking for a few minutes.
- Using a vegetable peeler, shave off a little bit of each stalk of the broccoli rabe and then chop.
- Add broccoli rabe to the pan and saute a few minutes.
- Add a couple tablespoons of water to the pan and cook for 20 seconds.

- 1 1/2 cups lukewarm water
- 1 1/2 cups all-purpose flour
- 1/2 yeast packet
Homemade Bread
- 1/2 yeast packet
- 3 1/2 to 4 cups flour
- 2 honey packets
- 1 1/2 teaspoons salt
- 1 cup lukewarm water
- 2 cups ice cubes

Starter
- Stir together all of the starter ingredients in a bowl and cover with a clean kitchen towel. Let sit at room temperature for at least 2 hours and up to overnight.
Homemade Bread
- Stir the starter slightly.
- Add yeast, flour, honey, salt and water. Stir to combine, and let sit for a few minutes.
- Turn dough onto a floured work surface and begin kneading; add additional flour a little at a time as needed until a nice soft dough forms. (Total kneading time should be 10 to 12 minutes.)
- Place in a greased bowl, drizzle some oil over the top and cover with a dish towel. Allow to double in size, approximately 1 hour.
- Punch the dough down and allow to rise for another 45 minutes.
- Preheat oven to 475 degrees and place a cast-iron skillet on the lowest rack in the oven.
- Allow the skillet to preheat for 30 minutes.
- Place the dough top side down on a very lightly floured surface. Sprinkle with flour and form into a ball.
- Place on a parchment-lined tray dusted with flour.
- Dust the dough with more flour, then make three slashes in the top of the bread.
- Place in the oven.
- Pour ice cubes into the cast-iron skillet and immediately close the oven.
- Turn oven down to 425 and bake bread for 30 to 35 minutes.
